Olive surely results the more diffused cultivated arboreal kind in the province of Frosinone. Motives are due first of all to the moderate climate, excellent for the development of this cultivation, and to the particular orography of the ground, under mountains and hilly, typical of the dorsal average Apennine. Besides, for millennia, historical, cultural and religious motives, have made of this prince of the table a fundamental component of the food regime, and today it results the most approved fat also from the dieticians. Despite the good productions quantitatively (about 300.000 quintales), unfortunately the marketing of the product, by thousand of small producers, doesn’t allow a strong concentration and an efficient offer on the market.
